thanks for getting  this started. sounds like its not straight forward, am particularly worried about commercial extraction… I think the advice Justin is giving regarding commercial vs high quality domestic should not be overlooked. EXACTLY, WE SHOULD AT LEAST CHECK IT OUT. JAN ALSO EMAILED AND COMMENTED SHE WENT TO A PLACE IN USA WHERE THEY WERE UNABLE TO USE THEIR KITCHEN BECAUSE OF THE EXTRACTION.

 

Perhaps we might go with a F&P appliance, especially now that we have a commercial account with them. This thing looks good to me and we may get it for $4000 from F&P.

I had a chat with a friend who has been in the food industry for 30 years (Pasta D’ORO, now Artisan food), who asked me, ‘who is designing the kitchen?’. Anyhow, she suggested to talk to Southern Hospitality to talk things over regarding our requirements. She said they are staffed by ex chefs. And of cause they are local. I HAVE EMAILED SOUTHERN HOSPITALITY BUT SO FAR NO REPLY.

Can someone team up with Roz and perhaps make an appointment with southern hospitality??? Our kitchen plan and that we may cook for 40 people is a good starting point. Hi again Roz 

 

I’ve had a look over the plan, it’s a sort of half & half Commercial kitchen with some modular stainless benches - Simply Stainless Specified - & domestic joinery.

 

Looks like a commercial gas Range on the plans, do you realise you will need a commercial extraction system given the output of the Commercial Range ? These systems are very expensive and require detailed air flow calculations with put red in inlet air to offset the amount of air being extracted.

 

I would suggest you buy a high quality domestic gas range with electric oven for ease of use, then you can simply install a domestic range hood.

 

With a mixture of open, commercial style stainless steel benching and domestic joinery units it may be just as easy and economical to have your joiner provide stainless worktops around the room for a more industrial look.

 

The trouble people have with a commercial appliances is that unless you come from a professional chef background most people would struggle to use them, for example these don’t have a clicker to spark the hobs, all commercial ranges are manually lit with a lighter, the extra power in the hobs and gas usage makes these not really suitable for a domestic environment.

 

Considering the large cost of an Extraction System -  $10K + and the noise and vibration these create in a commercial environment I would suggest you won’t really gain any benefits from going down this track.

 

Likewise if you were to install an Under Bench Commercial Dishwasher which will do a cycle in 1 minute, one rack at a  time,  someone will need to start this in the morning and empty it at night while it stays on and ready to use all day, again this may not be appropriate for your situation unless of course you are employing a professional chef or cook to to run this kitchen.

 

Having said all of that if you are determined to install commercial appliances and some commercial benching we can price up the Gas Range, Modular Benching and Under Bench Commercial Dishwasher ( Commercial dishwashers should not be installed with domestic joinery, they get very hot and give off steam which destroys timber products.
